“After a good dinner one can forgive anybody, even one’s own relatives.” “Food for us comes from our relatives, whether they have wings or fins or roots. That is how we consider food. Food has a culture. It has a history. It has a story. It has relationships.”

“Food can be very transformational, and it can be more than just about a dish. That’s what happened to me when I first went to France. I fell in love. And if you fall in love, well, then everything is easy.”

Reduces risk of a sudden spike in blood sugar– As compared to normal flour, multigrain flour is high in dietary fibre. Fibre is known to slow down the release of sugar into the blood, which helps reduce the risk of a sudden spike in blood sugar levels, a common problem faced by diabetics.

Helps in digestion – High fibre also means that the multigrain flour or atta will help with digestion. Healthy digestion is very important to stay healthy overall, as it is responsible for the absorption of nutrients in the body.Rich in complex carbohydrates – While diabetics need to keep a check on their carb consumption, they also need to include some complex carbohydrates in their diet to ensure enough energy to get through the day. Multigrain flour provides the right amount of complex carbohydrates which act as fuel in the body, without risking blood sugar spikes.

High in protein – Multigrain flour contains soy, chickpeas, etc, which increase the protein content of the meals. Protein helps in repairing and building tissues and thus keeps the body strong. Keeps the heart healthy– An important ingredient in multigrain flour is oats. Oats are rich in an antioxidant Avenanthramides which protects the heart from damage due to bad cholesterol LDL. Heart and kidney damage are common byproducts of diabetes, and therefore need to be taken proper care of. Multigrain atta or flour can be made easily at home. However, given the tools and appliances you might have at home, the quantity can be restricted. You may mix any number of grains, according to your choice into the multigrain flour. Some common ingredients include maize, jowar, bajra, whole wheat, desi channa- chickpeas, barley, amarnath, green gram and moth beans etc.

Mix all the grains together, and grind them into a powdery texture using a mixer grinder. To facilitate the process, keep these grains mixed in a box, and grind fresh atta every time you need to use it.
